Chocolate Chip Pumpkin Spice Muffins
Happy Monday! I got home from work and was really in the mood to make a pumpkin treat! So I picked up this pumpkin spice muffin mix from King Soopers, and then added my own twist! I made one batch with chocolate chips and one batch without! Chocolate chips are such an easy add in that add a little pizzazz 😍 Let me know in the comments if you tried this recipe out!
Lets dive in....
2/3 cups of water
1/4 cup vegetable oil
12 Standard Muffins: 14-16 minutes
26-30 Mini Muffins: 10-12 minutes
High altitude (over 5,000 feet): Prepare as directed, adding an additional 2 tablespoons water.
Heat your oven to 350°F. Lightly grease muffin pan or line with paper baking cups.
Stir together water, eggs, oil and muffin mix until blended.
Fill the first batch of muffin cups 2/3 full.
Bake as directed above or until toothpick inserted in center comes out clean.
Mix in your chocolate chips to your pre-made muffin mix.
Fill your chocolate chip batch of muffin cups 2/3 full.
Bake your second batch as directed.
Cool 5 minutes until removing from pan.
Store in a tightly covered container.
