Easy Italian Pasta Salad | Recipe Friday
Happy Friday my friends! I am eating this pasta while I write to you and I am seriously in love! This is the best and makes enough for lunches. Meal prepping has become super important to us so we make sure there’s always something to eat, it’s healthy, and so we aren't eating out. Under 10 ingredients and this fills me up for hours!
1 16 oz box of rotini pasta (I used multi colored)
1 bell pepper (I used red because it’s my favorite, but you can use any kind) diced
1 cup cherry tomatoes (halved)
2 cups mozzarella (I used shredded)
1/2 pound sliced pepperoni (halved)
1 can black olives (10 oz) drained
8 oz Italian dressing
6 oz parmesan cheese
Cook pasta as directed on the box. While pasta is cooking, cut all veggies as directed above. Drain pasta, rinse in cold water, drain, and move to a clean bowl.
Add your black olives, bell pepper, pepperoni, tomatoes and mozzarella to pasta. Mix together
Stir in Italian dressing and parmesan cheese.
The husband and I approve and love this dish! We will def be having this again! It made about 5 servings and we saved some for our lunches this week!
